Unless you have been living under a rock the last 2 years or so, you may have noticed the internet and Facebook video recipes going nuts over zoodles.
For those of you who aren’t familiar with zoodles, they are noodles made with Italian zucchinis. Yes, you do have to have a special kitchen gadget called a spiralizer to make them but they are totally worth the purchase.
The gadget is inexpensive and it allows you to turn not just carrots but virtually any firm vegetable into a “noodle”. The benefit is you still get the opportunity to eat “noodles” which are common in many Asian dishes without eating a bunch of carbs. Don’t get me wrong, I am a huge fan of noodles from all parts of Asian but sometimes I do want to restrict my carb intake.
