The Unconventional No-Bake Chocolate Mousse Pie

Most cakes and pies these days require baking but not this one. The only “cooking” involved is melting the chocolate, butter, and marshmallows to make this dessert.


The crust is made by using chocolate wafer cookies which will not be cooked either making this one of the best no baking and no cooking desserts you have ever made.

Ingredients

  • 7 oz. chocolate wafer cookies
  • 6 tbsp. unsalted butter, softened and an additional 4 tbsp.
  • 10 oz. bittersweet chocolate, chopped
  • 2 1/2 c. and an additional 1 1/2 c. heavy cream
  • 1/4 c. powdered sugar
  • 2 tbsp. cocoa powder, unsweetened
  • 2 1/2 c. Mini Marshmallows
  • garnish with shaved chocolate or chocolate curls (optional)

Instructions

  1. Blend the chocolate cookies in a food processor until they are a fine crumb. Add the 6 tablespoons of soften butter, pulse food processor until butter and cookies are combined forming a soft dough. Place the loose dough in a 9-inch baking pie tin (or glass) evenly pressing all of the dough on the bottom and sides of the pan. Place in the fridge at least 20 minutes to set.
  2. Melt the chocolate, butter and marshmallows together using a bain-marie aka double boiler (place roughly 1/2 cup of water in a pot, bring to a boil then turn off. Place a glass or stainless steel bowl on top, then add chocolate, butter, and marshmallows into the bowl). Allow mixture to cool for about 5-7 minutes so that it’s warm, not hot.
  3. Using a separate bowl, beat 2 1⁄2 cups of heavy whipping cream with an electric mixer until it reaches “stiff peaks” consistency. Scoop roughly 1⁄4 of a cup and mix into chocolate mixture cooling down the chocolate a bit more. Pour in the rest of the whipped cream and gently fold into the chocolate mix to cream chocolate mousse. Pour the mousse into the cookie pie crust. Be sure to evenly spread.
  4. At least 45 minutes before serving, whip the remaining 1 1⁄2 cups of heavy whipping cream along with powdered sugar and cocoa powder, until stiff peak consistency. Gently scoop onto the chocolate mousse then evenly spread it around. Garnished with shaved chocolate and or chocolate curls. Place in the fridge so that it chills for the 30-40 minutes. Slice and serve.
