In a world of fusion cuisine what better way than to combine flavors than with these shrimp and guacamole wonton cups. A little pro tip for those of you intimidated by the wonton cups. You can replace the wonton cups with Tostidos Scoop chips.
Ingredients

24 wonton wrappers

24 medium shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon cajun seasoning

Salt and pepper to taste

1/2 cups homemade guacamole (be sure to check out our recipe for guacamole)

2 tablespoons fresh cilantro, chopped (optional)
Instructions

Pre heat oven to 350 degrees. Spray a mini muffin pan with non stick cooking spray.

Place a wonton wrapper in each muffin tin, gently pressing the wrapper to the sides of the tin. Make sure the center stays open.

Bake for about 10-12 minutes or until golden brown.

In a medium bowl add shrimp, olive oil, garlic, cajun seasoning, salt, and pepper and combine.

Heat 1 tablespoon of oil in a skillet over medium high heat. Add shrimp to heated skillet and cook until pink.

Remove wontons from the oven and fill each one with guacamole and top with 1 shrimp. Top with cilantro and serve immediately.
