Fajitas make an exceptional meal regardless of the time of year you choose to make them. Not only can you season them with a bunch of ingredients you can mix and match the veggies depending on the type of protein you decide to use.
Some time ago I was on a very restrictive diet and workout routine, my one salvation was fajitas. They were quick and easy to make not to mention healthy. I would chow down on fajitas several times a week to keep my mind and stomach sane.
To this day they are one of my favorite light comfort foods to turn too when I feel like my nutrition is getting a derailed. These fajitas, however, have a few key ingredients I never even thought about using before.
