When it comes to roasts, there is only one roast that is king of them all. That roast is none other than prime rib. This type of roast is one of the most if not the most expensive meats you will ever eat.
There is a good reason behind it but often misunderstood. Prime rib aka standing rib roast is a cut of meat from the primal rib of beef. A true standing rib roast will include 7 rib bones (a full rack) and is large enough to feed anywhere between 14-16 people.
Most people confuse the name prime rib as a cut of meat but that is not the case. The governing board in the U.S. that creates and monitors the quality of meat is the USDA (US Department of Agriculture). The USDA has 3 grade levels issued to all meat processed in the U.S. which are Select, Choice, and Prime.
Prime is the absolute best of the best and will be the most expensive. The average consumer who buys a standing rib roast will unknowingly purchase a Choice standing rib roast and not a true Prime cut of meat. An authentic prime rib is a standing rib roast that is graded as a Prime level cut of meat otherwise you are buying and eating a Choice standing rib roast.
One would think there is very little difference between a Choice and Prime cut of beef, but if you were blind tested and served each of the meats without a doubt you would notice a monumental differences between the two.

A little professional advice: When you purchase a standing rib roast from your local butcher make sure you stress they sell you a Prime grade roast and not a Choice grade roast. They may have to special order the roast for you but it will be worth it in the end.
