I year ago I was lucky enough to spend a few weeks in Spain and fell in love with the country and the food. Traveling to and from Mexico as a kid I got to experience some of the Spanish foods and flavors left behind by early travelers so I at least had a point of reference.
Once in Spain, however I got to experience a slew of other foods and flavors unknown to my palate. I loved the concept of how the Spanish ate which is very similar in Mexico (no surprise there). Depending on the time of the day the “diet” consists of certain items.
Within this eating habit are tapas. One of the most popular is croquetas de jamon aka ham croquettes. If you are unfamiliar with a croquette the easiest way to describe them is a hush puppy.
