Yes, homemade buttery, flaky pie crust is amazing in a quiche but it’s nice to give yourself a break from carbs and excess fat from time to time.
It’s hard to believe but you will be pleasantly surprised when you bit down on this quiche and hardly miss the crust at all. After you have had a chance to sample this crustless quiche you are more than welcome to go back at a later date and incorporate a crust if living on the wild side doesn’t suit your personality.

- 1 clove garlic, minced
- 10 oz. box frozen spinach, thawed
- 4 large eggs
- 1 cup milk
- 2 oz. feta cheese
- ¼ cup grated Parmesan
- ½ cup shredded mozzarella
- Salt & pepper to taste
