We can all agree that keeping food simple is often the best way of eating. Yes, fancy elaborate meals often seen in a Michelin Star restaurant are an incredible treat but we can all agree this style of eating is not sustainable every day.
One of two things will certainly happen.
You will go broke and gain a ton of weight from all the rich food you are eating. That’s where comfort food finds it place in our lives. Yes, not all comfort food is very healthy but it’s often simple and it puts a smile on our face. Sometimes that is all we can really ask for in a meal.
Spinach and ricotta stuffed shells are the perfect example of comfort food. It has pasta, tomato sauce, spinach, and cheese. Nothing overly complicated or elaborate and the flavors are a something we are all really familiar because the dish uses flavors we have eaten all throughout our lifetime.
How many times in your life did you abandon your friends after school and ran home because your mom told you she was serving spaghetti and meatballs? This dish has a familiarity we have all come to love and best of all, it certainly qualifies as comfort food.

- 16 jumbo pasta shells
- 1-1/2 tbsp olive oil
- 2 tsp fresh garlic, minced
- 4 cups (packed) fresh spinach leaves, roughly-chopped
- 12 oz ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1 large egg
- 1 tbsp fresh basil, finely chopped
- 1 tsp kosher salt
- 1/2 tsp freshly-ground black pepper
- 1-1/4 cups marinara sauce
