Spinach and Marinated Artichoke Pizza With Mushrooms

Ingredients 

  • 1 pound of pizza dough (learn to make your own homemade dough. Check out our recipe here for homemade pizza dough)
  • cornmeal (used to dust the baking sheet)
  • cups marinated artichoke hearts, drained and quartered (if brine is too strong rinse for a few minutes under cold water then drain)
  • cups fresh spinach
  • ounces shredded mozzarella
  • 1⁄2 cup grated Parmesan
  • kosher salt and black pepper
  • 1 1⁄2 cups marinara sauce

Instructions

  1. Preheat oven to 475° F. Quarter the pizza dough, then roll out each quarter to a circle roughly 1/2 inch thick. Dust 2 sheet pans with a little cornmeal place two rounds on each sheet pan.
  2. Evenly spread the marinara sauce on each dough round. Evenly spread the artichoke hearts, spinach, mozzarella, and Parmesan on all four rounds. Season each pizza with roughly ¼ teaspoon salt and pepper. Bake until the crust is golden brown, 18 to 20 minutes.
