If you are in the need of a little sushi as a quick snack or perhaps you want to wow your friends the next time they come over try whipping up a batch of spicy tuna rice cakes. It combines tasty Japanese sushi with the simplicity of a a rice snack on the. The end result however is pleasing to the eye and your taste buds.
Ingredients
- 1/2 lb sushi-grade ahi tuna
- 1 tbsp sesame oil
- 1 tsp hot chili oil (make your own chili oil by clicking here)
- 1 tbsp chives (chopped)
- 1 tbsp mirin
- 1 tsp toasted sesame seeds
- 1/2 medium cucumber cored and diced
- 1/2 large ripe avocado
- 1 1/2 tsp soy sauce
- 1 pack of rice cakes
- 1 handful of bean sprouts
Directions
For the Dressing
- Combine the sriracha, sesame oil, chili oil, chives, cucumbers, mirin, and soy sauce in a bowl. Gently whisk together for about 30 seconds to create the dressing. Set aside for now.
For the Rice Cakes
- In a separate bowl smash the avocado with the back of a fork.
- Spread roughly 1 tbsp of the avocado, on desired number of rice cakes.
Assembling the Rice Cakes
- Add the cucumber, tuna, and bean sprouts to the dressing made in step 1. Gently toss with your hand to avoid the tuna looking mushy.
- Scoop roughly 1-2 oz of the poke mix onto the avocado covered rice cakes. Sprinkle with the toasted sesame to garnish. Serve immediately.
