There comes a time in every adult’s life where we have to choose between the can or no can. You know exactly what I mean by that. No matter if you shop at a health food store or the regular run of the mill grocery store. The canned version of soup will always be less appetizing than the real thing.
For me, canned soup always has the flavor of the metal can. Even when purchasing a more expensive, organic, “healthy” version. Canned food will always have a distinctive metallic taste.
Have you ever tried to make chili with canned beans vs a batch of freshly made ones? The flavor is completely different. The same could be said about tomato soup.
Sure it’s convenient to open a can but wait until you try a simple tomato and basil soup like the one below. Your taste buds will have a hard time going back to the old way of eating tomato soup that’s for sure. Don’t forget to pair your soup with a grilled cheese sandwich!
Ingredients

2 Tablespoons butter

2 medium cloves garlic, minced

2 medium carrots, peeled and diced

1 medium onion, chopped

4 cups chicken stock
-
1 cup water
-
8 Roma tomatoes (or 6 regular tomatoes), chopped

¼ cup fresh basil, finely chopped

½ cup fresh parsley, finely chopped

Secret Ingredient – A squirt or two of lemon juice
Instructions

In a large pot, melt butter over medium heat. Stir in garlic, carrots and onions.

Cook over medium-low heat until the onion is tender.

Add the chicken stock and water, cover and simmer for 20 minutes.

Stir in the tomatoes and simmer for another 10 minutes.

Remove from heat and use a handheld blender to blend the soup until smooth.

Stir in the basil and parsley.

Add salt and pepper to taste.

If the flavor is flat, add 1 to 2 squirts of lemon juice to taste.

Serve hot with fresh garlic bread!
