Plantain Cups With Avocado Shrimp Salad

This recipe utilizes the twice fried method. This is done when the plantains are still mostly green and inedible unless cooked. You start by frying the plantains, smashing them and then frying again until golden brown.


Instead of smashing them flat like a pancake you smash them just enough inside a muffin pan so that you form a “cup”.
