We are all a little self conscious about what we eat sometimes and every now and then you just want to grab a muffin as your are running towards the door to get to work.
These paleo pumpkin chocolate chip muffins will satisfy your pastry urge because your stomach will think, “oh thanks, finally I get a freakin’ pastry”.
Your brain however will now the truth and it will never share with you stomach that you gave it a…..gulp….healthy muffin.
Ingredients
- 200 grams almond flour (about 2 cups)
- ¼ cup coconut sugar
- 2 teaspoons cinnamon
- ½ teaspoon baking soda
- ⅛ teaspoon sea salt
- 3 eggs
- ½ cup pumpkin puree
- 2 tablespoons ghee, melted (you can also used clarified butter)
- 1 teaspoon apple cider vinegar
- ¼ cup mini chocolate chips
Instructions

Preheat oven to 325 degrees and grease or line muffin tin.

Combine almond flour, coconut sugar, cinnamon, baking soda, and salt in large bowl. Combine eggs, pumpkin, ghee, and vinegar in medium bowl. Stir wet ingredients into dry ingredients. Fold in chocolate chips.

Using a large ice cream or cookie scoop, fill muffin cups ¾ full.

Bake for 20 – 25 minutes, until golden brown and toothpick inserted in center comes out clean. Cool on wire rack.
