Lazy Sunday’s Call For No Fuss Meals Like This Casserole

We don’t often write articles and or feature recipes that involve casseroles or meals that resemble them. Lazy Sunday Casserole, however, is one that we can definitely get behind, however.


Not to put down those that make casseroles that often involve 5 cups of cheese and at least one can of condescend soup but that is just not our style. Most of the recipes that involve the world casserole are not something we are akin to eating on a regular basis which is why the subject is often forgotten about.

Lazy Sunday Casserole, however changes all of that. The recipe consists of loads of fresh veggies and the only processed food is the Italian sausage which is pretty impressive. There are not complicated instructions or cooking techniques so this recipe is awesome.

Ingredients

  • 5 Italian sausages
  • 1 pound red potatoes, cubed
  • 1/2 pound baby carrots
  • 1 red pepper, cut into large chunks
  • 8 ounces whole fresh mushrooms
  • 1 large onion, cut into large chunks
  • 3-4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon fennel seeds
  • Salt and pepper, to taste
  • 1/2 cup chicken broth
  • 3-4 tablespoons balsamic vinegar
