Getting Serious With Elote (Mexican Street Corn)

Elote’s are one of the only recipes I can think of that do not require a recipe. You get to assemble the Elote’s with as little or as much of the ingredients so go nuts.


Ingredients 

  • 1-4 Fresh corn (yellow or white)
  • 2 oz fresh cotija cheese (Parmesan cheese is an excellent substitute)
  • Mayo
  • Chili powder (if you like a kick use cayenne pepper)
  • 1 lime (not needed unless your Mexican)
  • Wooden skewers

Instructions

  1. Place desired number of in the microwave. Cook for 8 minutes. This process will naturally steam the corn.
  2. Very carefully remove the husk and silk which is super hot at this point. If you want to give your corn a smoky finish grill the corn for 2-3 minutes. If not move onto the next step.
  3. Using a knife, spoon or spatula, generously cover the corn with mayo. Roll the desired number of corn’s with plenty of cotija cheese, then dust the corn with chili powder.
