We’re getting serious around here with Elote (Mexican street corn). No more messing around with standard corn on the cob with a little butter. Oh no, #&$@ is getting real.
For those of you wondering about my ramblings. Mexican street corn (Elote) is a corn on the cob that has received a little extra pampering a la Mexicana.
The traditional, I don’t give two F’s about my diet is perfectly executed by roasting or better yet grilling some corn on the cob, slathering it in mayo, rolling it in cotija cheese, and then dusting it with a ton of melt your face chili powder.
If you are a real Mexican, you proceed to reach for a lime and squirt a little fresh lime juice on the corn before putting chomping down. [nextpagelink][/nextpagelink]
