Getting kids to eat veggies can be extremely challenging when they are going through their picky eating phase.
Rather than beating your head against the wall why not give your kids their veggies US Navy Seal style and go covert ops.
I came across a recipe on My Recipe which touts itself as Green Smoothie Muffins. The idea is super creative and will have your kids eating veggies regularly.
Ingredients
- 2 cups white whole wheat flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 3/4 cup non-dairy milk
- 1 5 oz. bag of fresh spinach
- 1 small banana
- 2 teaspoons vanilla extract
- 1/4 cup coconut oil
Instructions
- Preheat oven to 350°F.
- Mix all of your dry ingredients in a large bowl.
- Using a blender of food processor, blend milk, spinach, banana, and milk extract until smooth.
- Heat coconut oil in a microwave safe bowl until it liquefies (15-30 seconds).
- Pour coconut oil into green smoothy mixture. Mix until well blended. Fold the wet ingredients into dry ingredients forming a batter resembling cake mix.
- Spray each cup of a muffin tin with cooking spray. Fill each muffin cup 3⁄4 full with batter. Bake at 350°F for 20-25 minutes until an inserted toothpick comes out clean.
- Let them cool slightly and enjoy.
