Hopefully I did not confuse you with several vocabulary words such as gaucho and chimichurri. In a nutshell, a gaucho is a South American cowboy. I am generalizing here because some people feel gaucho’s are more specific to Argentina but a little online search shows otherwise and I am not a historian so there. Chimichurri sauce is the equivalent to a latin spicy pesto with the exception of pesto uses basil and chimichurri uses parsley.
