Quinoa seems to be the go to starch these days. It’s high in protein which is the primary reason many vegetarian and non vegetarian individuals are so drawn to it.
I personally feel its a great substitute for many things like flour in these quinoa and sun butter blondies. Quinoa is also a great substitute for thinks like couscous, farro and other grains which brings us to this creamy cilantro quinoa side salad.
Sure there are some people who will complain that it’s not really a side salad so if you feel more comfortable calling it a side dish, then go right ahead. Regardless of what you choose to call this dish, just know you are getting an incredible side dish that will pair well with a grilled chicken, beef, fish.
