Cinnamon French Toast Muffins, The Perfect Breakfast For Busy Individuals

With everything going on in our lives, it becomes harder and harder to have a tasty breakfast you look forward to eating. It may be tempting and easy to grab a bite to eat at your local fast food restaurant but it’s best not to.


You will probably hate yourself by lunch time. If you are going to sacrifice health for convenience, isn’t it best to eat something mildly healthy? Something you have full control over and know how much fat, salt, or carbs you are getting in your meal?

That’s where french toast muffins come in to save your life. French toast may not be the most healthy breakfast item in the world, but it’s delicious and easy to make!

Turn that delicious breakfast item into a muffin? Now your living life to the fullest. These muffins travel well, so they can be prepared 1-2 days before you need them. Be sure to keep them in the fridge until you are ready to eat.

Ingredients 

  • 6large eggs

  • 2 cups whole milk

  • 2 teaspoons ground cinnamon

  • 1 1/2 Tablespoons sugar

  • 1 1/2 Tablespoons vanilla extract

  • 14 cups cubed bread (1/2-inch cubes; slightly stale bread works great)

Instructions

  1. Preheat the oven to 350°F. Grease a muffin tin with butter or cooking spray.

  2. In a large bowl, whisk together the eggs, milk, cinnamon, sugar and vanilla extract. Add the cubed bread to the bowl and fold until combined and the bread has absorbed all of the liquid.

  3. Divide the bread mixture among the muffin tin cups, pressing it lightly into each cup to compact it.

  4. Bake the French toast cups for 25 to 30 minutes until they’re slightly crisped on top and cooked throughout. Allow the cups to cool for 5 minutes in the muffin tin then scoop each one out and serve topped with maple syrup or vanilla glaze.
