Chocolate Custard Cake Is Your Salvation From Lava Cake

This chocolate custard cake is amazing. It’s kind of like eating a light chocolate cake and a chocolate pudding cup at the same time.


Ingredients 

  • 4 eggs, at room temperature (let them sit out for about 15-20 minutes before making recipe)
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cup sugar
  • 1/2 cup butter, melted
  • 1/2 cup all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 2 cups milk, lukewarm (heat in microwave for 30 sec to 1 min)
  • Optional 2 tablespoons powder sugar for decorating
  • Optional fresh raspberries for decorating

Instructions

  1. Preheat oven to 320F. Grease a 9×9 baking pan lined with parchment paper using a little cooking spray.
  2. Separate egg whites and yolks. Beat the egg whites using an electric mixer until the egg whites reach stiff peak consistency then set aside.
  3. Pour vanilla extract into egg yolks, add sugar, then beat using an electric mixture until the egg yolks reach a creamy consistency. Add melted butter and mix until well incorporated with egg yolks. Whisk flour and cocoa powder together, then add this to the egg yolks mixture. Beat until the flour is well incorporated into egg yolk mixture. While on low speed, gradually add the milk.
  4. Using a rubber spatula, add egg whites one-third at a time and gently mixing only a few times between egg whites so that the mixture is not overmixed.
  5. Pour the mixture into the greased baking pan, bake for 1 hour.
  6. Let the cake cool to room temperature then refrigerate for at least 1 hour.
  7. Cut the cake into squares, dust with powdered sugar then decorate with fresh raspberries.

 

**Additional note: Make sure to keep the cake refrigerated after eating desired pieces.

I was wondering if a glass 9×9 baking dish can be used? The temp is right for glass bakeware use, & I guess the question lies in whether or not greasing the glass bakeware will prevent it from sticking.
I’ve, obviously, all the ingredients, & am going to make this tonight for dessert.
So, I presume, we will find out.

That is a great question. Yes, you will want to grease your glass baking dish well because glass and ceramic baking dishes have a greater tendency for food to stick to them. Something else to keep in mind is glass takes a long time to heat but it retains the heat long after the bakeware has been removed from the oven. A good rule of thumb is to reduce the cooking temp by 20-25 degrees because the cooking will continue after the dessert is out of the oven. Be sure to let us know about your results.
