Sweetbreads not to be confused with sweet breads (pastries, rolls, etc) are an organ meat specifically from the thymus glands of veal and lamb.
They look kind of like brains which has the tendency to scare most people, and I am sure by now you might be wondering why do people eat them in the first place?
People devour plates of sweetbreads because the texture and flavor are absolutely incredible. Unlike other offal meats (aka organs), sweetbreads do not have strong textures or characteristics compared to tripe, liver, or kidneys.
