I would be screwed if it wasn’t for pasta. I am thankful every week that pasta was introduced to this side of the world. It’s easy to make, it cooks quickly, and you can add just about anything you want. Hell, even the sauces can be interchanged however you want. If it wasn’t for pasta and recipes like chicken and bacon pasta with spinach and tomatoes in a garlic cream sauce, I would be SOL during the week.
We all get busy running around with various activities and then the stomach roars and the clock strikes 6 pm…dinner time. Suddenly it’s a mad rush trying to figure out what to serve the family. My favorite go to option is pasta for all the reasons previously mentioned.

Ingredients
- 2 tablespoons olive oil
- 1 pound of chicken breasts
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning (thyme, oregano, basil – combined)
- 5 medium Roma tomatoes, cut into eighths
- 1 cup cooked spinach
- 5 garlic cloves, minced
- 1⁄4 teaspoon crushed red pepper flakes
- 6 bacon strips, chopped, cooked until crisp and drained on paper towels
- 1 1⁄3 cups half and half
- 1 1⁄3 cups shredded Parmesan cheese
- 10 oz penne pasta
- Parmesan cheese for serving
