The Changing Of The Seasons Pumpkin Cheesecake Bars

This dessert is broken up into 3 parts consisting of the crust, the filling, and the top layer kind of like a pumpkin pie.


Instructions

Crust
  • 2/3 cup light brown sugar
  • 1/2 cup softened butter
  • 1 cup all-purpose flour
  • 1/4 cup pecan meal
  • 1/2 teaspoon vanilla extract
 Pumpkin Cheesecake Bar filling
  • 8 oz softened cream cheese
  • 3/4 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pure pumpkin
  • 1 teaspoon pumpkin pie spice.
 Top Layer
  • 1/2 cup softened butter
  • 2/3 cups granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup pecan meal
  • pinch of salt
