Cauliflower Fried Rice So Nice You Can Say It Twice

This cauliflower fried rice makes a great meal and you can customize it however you want. Give the recipe a try and then experiment as you wish.


Ingredients 

  • 1 head cauliflower (should make 4 cups rice)
  • 1 teaspoon sesame oil
  • ½ yellow onion, finely diced
  • ½ cup frozen peas/carrots
  • ¼ teaspoon ground ginger
  • 1 teaspoon red pepper flakes*
  • 2 large cloves garlic, pressed or minced
  • 2 tablespoons soy sauce (tamari if gluten free)
  • ½ – 1 tablespoon lime juice
  • 2 tablespoons sliced green onions
  • 2 tablespoons chopped cilantro

Instructions

Cauliflower “Rice”:
  1. Cut cauliflower into florets.
  2. Wash and dry the florets.
  3. Place cauliflower into food processor and pulse until it resembles rice (see video above for reference).
  4. Set aside.
Cauliflower Fried Rice:
  1. Heat oil over medium heat. Once hot, cook onions, carrots/peas, and spices for about 5 minutes or until veggies are soft. Add garlic in the last 30 seconds.

  2. Lower heat to medium low. Add cauliflower “rice” and cook about 5 minutes or until desired texture is reached.

  3. Stir in soy sauce, lime juice, green onions, and cilantro.

  4. Taste and re-season if necessary.

  5. Serve as is or with a fried egg, chicken, shrimp, etc.
