You know you are in for a fabulous treat when you are about to bite down on meat that has been slowing braising for hours in veggies, red wine, and broth. Sure, you could have a bowl of pasta or a seared medium rare steak but you can’t beat the beauty of meat that has slowly braised for hours at a time.


As the connective tissue begins to break down, and the meat fibers soften the sauce is slowly turning into liquid gold that will likely leave you licking the plate until there are no traces of a meal ever being served.

In the comfort of my own home, the plate is lifted off the table and the plate is then tipped so the juices can then pour directly into my mouth. Sure, these table manners won’t fly in most restaurants but when you are in your own home why waste a good sauce?
