A Red Wine Bucatini Pasta That Brings More Happiness Than Barney The Dinosaur

By now you are probably dying to find out why does this pasta resemble Barney the Dinosaur?


For starters this red wine garlic bucatini is purple just like the giant dinosaur. Second, this pasta will put a smile on your face just like the dinosaur did on T.V. for so many years.

It’s okay to be skeptical of this pasta just like you were of that giant dinosaur as a kid. I guess that makes three reasons why the two resemble each other.

Ingredients 

  • 1 1/2 lbs of broccoli rabe, or rapini, thick stems removed

  • 1 lb spaghetti

  • one 750 ml bottle of dry red wine (bordeaux, zinfandel, cabernet, pinot noir, etc.)

  • 1 tbsp of sugar

  • 1/3 cup extra-virgin olive oil

  • 4 garlic cloves, sliced

  • 1/2 tsp red pepper flakes (or less if you prefer it less spicy)

  • 1 tsp kosher salt, plus 1-2 tbsp for cooking spaghetti

  • 1/2 tsp black pepper

  • 4-6 poached eggs

  • 1/2 cup grated parmigiano-reggiano

Instructions

  1. Pour the 3 cups of red wine and water into a large sauce pot and bring to a boil.

  2. Add bucatini, reduce heat slightly and cook until al dente, about 8 minutes.

  3. Reserve 1/2 cup cooking liquid then drain the pasta.

  4. Place olive oil in a large skillet over medium heat.

  5. Add garlic and red pepper flakes and sauté for 1 minute.

  6. Add the reserved wine and cooking liquid to the skillet and cook an additional 1 minute.

  7. Transfer the bucatini to the skillet, toss until fully coated with the red wine, olive oil, garlic mixture.

  8. Garnish with the chopped parsley and grated parmesan.

  9. Serve each portion with a soft boiled egg.
