Chicken Satay With Dipping Sauce

If you are in need of a recipe for a quick simple dinner or perhaps you have guests coming over and you simply need a few bites. Offer your company some chicken satay. Your significant other and or company will not complain when they bite into these skewers after dipping these tasty morsels in the peanut coconut sauce that accompanies them. In the event of peanut allergies, I will show you how to recreate these without the risk of a hospital.

Ingredients

Satay Chicken:

1 1/2 Pounds chicken thighs – deboned and cut into 1/2 inch cubes

1 Clove garlic, crushed

1 Serrano or jalapeno chili deveined and chopped (keep the veins if you want your satay spicy)

3 Tbsp Soy sauce

2 Tbsp Coconut oil

1 Tsp Honey

Wooden skewers, soaked in water for an hour+

Satay Sauce:

2 Tbsp coconut oil

1/2 Half small yellow onion, chopped

1 Chopped serrano or jalapeno chili 

1 Clove of garlic, crushed

1/2 Cup peanut butter (100% peanut, no added sugar. If you have a peanut allergy substitute with sun butter) 

1 Tsp honey 

1/2 Can coconut milk 

1/2 tsp fish sauce 

1 Tsp soy sauce 

Directions 

Chicken Satay Marinade:
  1. Blend together your garlic, chili, soy sauce, coconut oil, honey.
  2. Place your cubed chicken in a glass baking dish, pour the marinade over the chicken and toss to make sure all sides of the chicken are covered in the marinade. Cover with plastic wrap and allow chicken to marinate over night (if you can’t marinate over night be sure to allow 3-4 hours of marinating)
Peanut Dipping Sauce:
  1. Heat the coconut oil in a pan over a medium heat. Toss in your onion, chili and garlic. Cook the onions and chili just until both are soft.
  2. Once the chili and onions are soft, add your honey, and peanut butter (or sun butter). Once all of the items have come together, pour contents into a blender. Pour your coconut milk and blend all of the ingredients until smooth.
  3. Prior to serving, add your fish sauce and stir until the fish sauce is well incorporated into the sauce.
Chicken Satay:
  1. Assemble your skewers by piercing several pieces of chicken with the wooden skewers.
  2. Place the skewers over a grill, allow the chicken to cook for roughly 10 minutes. Turn the skewers over and allow the chicken to cook another 10 minutes. Be sure to check the chicken is cook thoroughly. You can also broil the skewers in your oven by setting your broiler on high and placing the chicken in the middle rack of the broiler for about 10-12 minutes on one side then flip over and repeat.
  3. To serve, place a couple of the skewers on a serving dish, pour your sauce in a bowl or ramekin and dig in.
