Grilled Catfish Corn and Black Bean Tostadas

It may be taco Tuesday but no one said you can’t serve tostadas like grilled catfish corn and black bean tostadas. Technically speaking a tostada is a flat taco.


Tacos are either soft or hard, rolled or simply folded. The tostada is a taco except it is served open faced. Much like an open faced sandwich or burger; the taco can be opened faced too except in Mexican cuisine it has an actual name.

Instead of being dorky and saying open faced taco, Mexican’s came up with the term tostada. Steve from The Black Peppercorn came up with an open faced taco (ahem tostada), which you will love.

Ingredients 

  • 4 fresh catfish fillets

  • 2 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1 tsp oregano

  • ½ tsp thyme

  • ½ tsp black pepper

  • ½ tsp cayenne pepper

  • 1 can black beans, drained

  • 1 can corn, drained

  • 1 sweet red pepper, cored and diced

  • 5 green onions, thinly sliced

  • 2 limes, juiced

  • ¼ cup fresh cilantro, minced

  • ½ cup feta cheese, crumbled

  • 12 tostada shells
