Chicken Thighs With Cilantro Lime Black Beans

In the last few weeks, I have become an advocate for one pot cooking. I won’t sit here and tell you it has to do with a health trend or better way of eating.

The reason has to do with being lazy. I hate having to wash a bunch of pots, pans, or bowls after cooking one meal. One pot cooking allows me to cut down on dishwashing and the food usually comes out great thanks to all the flavors simmering together.

In this recipe, you get your protein and carb in one serving all you need is a side of veggies or perhaps a salad and dinner is served.
