Browned Butter Mashed Potatoes Sound Crazy Until You Try Them

How do you mash potato? No, I am not talking about the popular dance from the 60’s although you might want to do the dance after eating these mashed potatoes.

Getting back to the initial question. How do you mash potato? Do you add sour cream, garlic, cheese, bacon? There are several different options you can take.

One of the most popular seems to be garlic mashed potatoes. Well, today’s mashed potato recipe takes it a step further and it features, garlic, parmesan, and wait for it……browned butter.

This was the first time in my life I have ever come across mashed potatoes with browned butter and I can’t wait to try them. Without even tasting these potatoes, I can tell they will turn out great because parmesan and potatoes go great together.

The browned butter will add a slight nuttiness making these potatoes out of this world.

Ingredients

  • 2 1/2pounds russet potatoes, peeled and chopped
  • 3/4cup (1 1/2 sticks) unsalted butter, cubed
  • 1 1/2cups whole milk
  • kosher salt and black pepper
  • chopped fresh chives, for serving

Instructions

  1. Steam the potatoes in ½ inch of water, covered, until tender, 18 to 20 minutes (adding more water to the pot if necessary); drain.
  2. Meanwhile, heat ½ cup of the butter in a medium skillet over medium heat. Cook, stirring occasionally, until the butter foams and begins to brown, 6 to 8 minutes.
  3. Mash the potatoes with the milk, 1½ teaspoons salt, and ¾ teaspoon pepper. Fold in the remaining ¼ cup of butter. Top the potatoes with the brown butter and chives. Serve warm.
