One of my favorite ingredients happen to be truffles. No, not the fine chocolate varietal even those do happen to be delicious. I am talking about the tuber like fungus that grows on the roots of some trees like oak trees.
White and black truffles are highly regarded in the culinary world for their pungent smell and charismatic flavor. They are stupidly expensive so getting the chance to eat a risotto or pasta with freshly shaved truffles is a rare luxury I recommend at least once in your life.
