Coincidentally, olive oil is next on our list. I can not stress enough how important it is to have at least one good bottle of olive oil in your kitchen. It makes the perfect appetizer. Serve a really good olive oil with a side of bread and watch it disappear in a nanosecond.
In Italy, olive oil is highly regarding as the finishing element to most dishes. For example eating a fillet of grilled sea bass over a bed of polenta. Rather than drowning the fish in a sauce and ruining the flavor a little olive oil is drizzled on top, allowing the natural flavors to come through.
