Yesterday my family and I went exploring and hiking through a scenic Muir Wood’s. Prior to our 3 mile journey with a 5 year old we decided to stop by San Francisco to quench are thirst for oysters, clams, and chilled libations. My wife ordered a Bellini to accompany her share of delicious mollusks, which gave me the idea to post an article today about the tasty beverage. Check out Jamie Oliver’s Bellini recipe which goes perfect with your Sunday brunch.
Ingredients
- 4 white peaches (you can substitue peach schnapps)
- 1 part simple syrup
- 4 parts Prosecco
How to mix
- Peel and blend the peaches. Strain and refrigerate until cold
- Mix 2 parts of peach puree with one part of simple syrup
- Add about 1/2 oz of the peach puree mix to your Champagne flute, then gently pour Prosecco into the glass. You want to leave the peach puree undisturbed at the bottom of the glass at this stage
- Just before serving, stir to mix the peach and Prosecco well
