Having visited various countries and having tried traditional and fine dining cuisine in various countries I can attest the improved quality of meat and how it is raised has considerable impacts on the flavor of what you are about to put in your mouth.
As consumers become more aware of their food and where it comes from, they begin to take notice of the quality of the meat and how it tastes. Gaining experience by eating dry aged steaks, wet aged steaks, Kobe beef and Angus beef is essentially like opening the door to a previously unknown world. The best analogy I can think of in this case is like in the movie The Nightmare Before Christmas.
Jack Skellington, accidentally stumbles into Christmas Land and his world is changed forever. He then spends a good portion of his time trying to understand what he witnesses firsthand.
