Pass The Ground Beef Tortellini Bake Wouldya

Ingredients

  • 1 lb ground beef (90% lean/10% fat if possible)
  • 1 small yellow onion
  • 1 tablespoon olive oil
  • 1 large garlic clove
  • 1/4 teaspoon fresh thyme
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon oregano
  • 2 tablespoons freshly chopped parsley
  • 1/2 to 1 teaspoon salt (depends on preference)
  • 1/8 teaspoon black pepper
  • 10 oz can diced tomatoes
  • 2 cups chicken or beef stock (beef stock is best for this recipe)
  • 1/2 cup heavy whipping cream
  • 1 1/2 cups shredded mozzarella
  • 2-3 tablespoons parmesan or pecorino cheese
  • 1 20 oz packet refrigerated cheese tortellini

Instructions

  1. Preheat oven to 350°F.
  2. Brown meat over medium-high heat in a dutch oven or heavy bottomed pot with olive oil making sure to stir constantly to prevent meat from clumping up. Reduce heat to medium then add onions, garlic, thyme, basil, salt, and pepper. Cook this for about 5-6 minutes or until the onions begin to turn translucent.
  3. Blend the canned tomatoes and stock together, pour this into the herbed meat mixture, along with the cream. Add the tortellini and allow the liquid to simmer. Once the liquid is simmering remove from heat, add roughly half the mozzarella. Gently stir a few times to make sure cheese is mixed in. Pour tortellini into a 13×9 baking dish.
  4. Sprinkle tortellini evenly with 1 1⁄2 tablespoons fresh parsley, sprinkle parmesan cheese evenly over parsley, then sprinkle remaining mozzarella cheese evenly on top of parmesan.
  5. Cover dish with foil then bake tortellini for 20 minutes, remove foil then bake another 15-20 minutes.
