Goat Cheese Spinach Hasselback Chicken Breasts

It seems the world can’t get enough of Hasselback various things. I have seen a wide range of potatoes and veggies being prepared the Hasselback way, but never meat.

Having tried Hasselback potatoes and sweet potatoes I must admit it works and now have become a loyal fan for the Hasselback movement.

This morning I discovered a recipe for Hasselback chicken breasts which caused uncontrollable drooling. Lunch time could not roll around faster so that I could try this amazing recipe.

You basically take a slightly modified version of creamed spinach which has been flavored with goat cheese, then you slice your chicken and stuff it with the cheesy spinach.

This recipe is way easier and faster than trying to butterfly the chicken breasts and then stuffing it with cheese and spinach.
