Last week I brought you a carnitas recipe that was awesome. This week I am bringing you my secret lasagna recipe that is guaranteed to be one of the best if not the best you have ever tried. The secret to this recipe is a pork stock that I used that came from the carnitas I made. The second secret item is sour cream in place of ricotta. The sour cream helps keep the lasagna moist and flavorful, unlike using ricotta cheese. The full recipe is below and you can also watch the video in which I walk you through the entire process.
Ingredients
- 1 1/2 tsp fresh chopped rosemary
- 3 Large sprigs of thyme
- 1/2 Medium yellow onion
- 1 pack 90/10 (fat) ground beef between 1 pound
- 1/4 Cup red wine
- 3/4 Cup pork stock (see the recent carnitas video) or substitute pork stock with 1/2 ground pork
- Half a box lasagna noodles
- Roughly 1 1/2 cups shredded low moisture mozzarella cheese
- 1/3 Cup Parmesan cheese (to sprinkle on top)
- 1/2 Cup sour cream
- 1 Medium garlic clove (chopped)
- 1 tsp dry oregano
- 1 tsp olive oil
- 1 24 oz Jar of tomato sauce
- salt and pepper (as needed)
Directions
Bolognese Sauce
- Heat your pot on medium high heat then add 1 tsp olive oil. Add meat and allow to brown slightly for 5-7 minutes and stir every couple of minutes to prevent the meat from forming large chunks.
- Add onion/garlic cook 5-7 minutes.
- Deglaze with red wine, then allow wine to cook until almost completely evaporated this will take about 7-10 minutes.
- Add your dry and fresh herbs and season meat with salt and pepper so the meat is not bland. Continue to stir for 5-7 minutes.
- Add the pork stock and turn down the heat to medium allowing the mix to cook for 10 minutes.
- Add the tomato sauce and allow the mix to simmer for 15 minutes.
Lasagna noodles
- Cook 1/2 a box of lasagna noodles according to the directions on the box.
- Spray the noodles with cooking spray on each side, set aside allowing them to cool.
Assembly
- Ladle enough sauce to cover the bottom of an 8×8 glass baking dish. Cut your lasagna noodles to fit the baking dish. Use three piece of lasagna noodles to cover the sauce, scoop roughly 1 tbsp of sour cream on top of each noodle and spread the sour cream to cover all three noodles.
- Sprinkle mozzarella cheese on top of the source cream, season this layer with salt and pepper.
- Repeat this process until the noodles are level with the top of the baking dish. Cover last layer with bolognese sauce, mozzarella cheese, and parmesan cheese.
- Bake lasagna at 350° for 45 minutes. Remove from the oven and enjoy.
