Diving Head First Into A Bowl Of Thai Curry Shrimp Soup

Not sure what your stance is on Thai food but for me, it’s an essential part of life. I don’t have to eat it every day of the week but I do like eating some form of Thai food at least once a week. I am accustomed to eating foods rich in herbs and spices so eating Thai food is a natural thing.


I absolutely love eating foods from around the world that are either heavily spiced or contain a lot of fresh herbs to bring the flavors together. What I find most enjoyable about Thai food is how surprisingly light the food is. You always feel satisfied but you never feel heavy like you just ate a pile of lead.

As far as soup and light meals go shrimp curry soup is the perfect meal when you want to fill a void while avoiding eating something heavy you will later regret. At the time of writing this, the weather was both cold and very wet all day so a soup is exactly the required meal to make me feel like I was somewhere warm and sunny.

  • 1 onion, diced

  • 1 tablespoon freshly grated ginger
  • 2 tablespoon red curry paste
  • 2 (12-ounce) cans unsweetened coconut milk
  • 4 cups vegetable stock
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro leaves
