Most restaurants and home chefs serve them breaded along with a demi-glace and or fortified sauce of some kind. Again, not because of a strong flavor but because how well sweetbreads pair with sauces.
Another way of serving them, but a little less common is simply searing them in butter and herbs and again pairing them with a sauce of some kind.
