There are brownies, there are cookies and then there are brownie cookies. Yep, pretty crazy I know. Even crazier is making chewy brownie cookie ice cream sandwiches.
Chewy brownie cookie ice cream sandwiches should be the kind of dessert you see being sold out of a food truck. Ta da, your next big business venture. Don’t forget you heard about it here first, so be sure to give us a little bit of credit when you are being interviewed and making the big bucks.
I know most people reading this have never thought about making ice cream sandwiches at home, but you have to try it with this recipe. At the very least try making the brownie cookies. By the way the recipe below makes 4 dozen brownie cookies.
Ingredients
- 1 cup butter
- 2 cups granulated sugar
- 1/2 cup semisweet chocolate chips
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon coffee extract
- 2 cups all purpose flour
- 2/3 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 4 eggs
- 1 container of vanilla ice cream-soften prior to serving (you will need about 1/4 cup ice cream per sandwich)
Instructions
Brownie Cookies
- In a medium saucepan, melt butter over medium heat. Add sugar and whisk 1-2 minutes to dissolve sugar. Add chocolate chips, vanilla extract, and coffee extract and whisk until smooth. Remove from heat, and set aside to allow to cool slightly.
- In a large bowl, mix flour, cocoa powder, salt and baking powder.
- Once the chocolate mixture has cooled slightly, add eggs one at a time, whisking well in between each addition.
- Pour the chocolate mixture into the flour mixture and stir until combined. Cover and chill for at least one hour.
- Preheat the oven to 350 degrees, and line a baking sheet with parchment paper. Scoop a rounded tablespoon of batter for each cookie, and bake for 10-12 minutes. Remove the cookies from the oven and transfer them to a cooling rack. Store in an airtight container.
Chewy Brownie Cookie Ice Cream Sandwiches
- Take out the ice cream from the freezer, allow it to slightly soften making it easier to work with (10-15 minutes).
- Flip one of the brownie cookies bottom up. Scoop about 1/4 cup of softened vanilla ice cream onto the cookie. Place another cookie on top and repeat for desired number of sandwiches. Eat right away if you like your ice cream sandwiches a bit softer if you desire a firmer sandwich place the sandwiches in the freezer for about 15 to 20 minutes allowing them to firm up.
