It’s national grilled cheese sandwich day so I am jumping on the bandwagon and bring you a tasty grilled cheese sandwich that is easy to make and even easier to consume. The sweetness of caramelized onions and the earthiness of brie cheese are what makes this grilled cheese sandwich really special. Feel freed to add turkey or bacon to escalate things further.
Ingredients
Recipe makes two sandwiches
1/2 of a medium yellow onion (sliced)
1 4oz wedge of brie cheese (2 oz per sandwich)
2 Teaspoons of canola oil
1 Tablespoons of white wine
1/2 cup of cheddar cheese grated
2 Slices of wheat bread
1/2 cup of water (use to deglaze the pan)
1 Tablespoon unsalted butter
Directions
1. Place the sliced onions in a medium pan on medium heat with the oil. Allow the onions to brown. Pour roughly 1 teaspoon of water in the pan allowing the pan to “deglaze” the onions. Stir the onions until the water is completely evaporated while scraping the pan to remove any browning. This procedure will allow the onions to caramelize faster without burning them. Repeat this step several times until the onions are dark brown. This will take roughly 10-12 minutes. Remove from the heat and set aside.
2. Melt the butter in a heat proof container. Coat one side of each slice with the melted butter using a pastry brush.
3. Flip one of the buttered bread slices so the buttered side is laying on top of a cutting board. Slice the brie cheese and spread 2oz of the cheese on the bread. Layer half of the caramelized onions on top of the brie. Pour 1/4 cup of cheddar cheese on top of the caramelized onions. Place the other slice of bread on top of the cheddar, butter side up.
4. Preheat a nonstick pan 2-3 minutes on medium to low heat. Add the sandwich to the pan and allow to brown 3-4 minutes or until golden. Flip the sandwich and repeat the cooking process. Serve and enjoy.
