Baked Pacific Cod With Lemon Feta and Grilled Corn Polenta

Anytime I find a seafood dish worth sharing, it will be done. People need to eat more fish! Not only is fish really versatile in the kitchen. The health benefits of eating seafood, and more specifically fish, are astronomical.

Take for example this baked pacific cod with lemon feta and grilled corn polenta. The flavors and the color contrasts are amazing. I was a little surprised when I first saw this recipe because I was always taught fish and cheese do not mix!
